I’ve been meaning to bake brownies for some time now. And this week offers perfect opportunity to do so, since we have two days off during the week, Tuesday and Wednesday.

I’m not as lucky as most of my colleagues to have holidays the whole week, and working on Monday felt like in a post apocalyptic world a little bit. Where normally the floors are full of people, it was very empty that day. Not one phone rang, you didn’t hear any steps nor the normal clicking while typing on the keyboard. So to keep the rest of us a little bit motivated -the whole 7 of us- I thought I’d bake something. I used Pinterest in my search for the recipe.

Do you use Pinterest? I started using it a while ago and there is one thing I noticed- there is a LOT of food out there. I mean, pinterest is full of stuff, and I’m sure everyone will find something to spend hours of exploring. At least I did, and found foods that only beg to be cooked and tried out.

Anyway, somehow I wasn’t in the mood to go through my collection of cookbooks. And so I stumbled upon this cream cheese brownies from springlane. It looked very tasty, and the recipe was also easy enough so I decided to give it a go, although I used much less sugar. And the result? The brownies were gone, and I have one tried recipe more to my collection, and something I could definitely recommend.

Makes ca 12 pcs.

Preparation time: 10 min                                            Baking time: 30 min

120g butter

120 g dark chocolate

50 g brown sugar

3 eggs

250g quark

250g cream cheese

60g flour

30g sugar

½ tsp baking powder

Preheat the oven to 180ºC. Melt the butter with the chocolate in a small saucepan over a medium heat, stirring, until smooth. Cool a little, then add the brown sugar, flour, baking powder and 2 eggs. Using a hand mixer, mix to a smooth dough and put aside.

In a medium sized bowl, combine the quark with cream cheese. Add the sugar, remaining egg and vanilla sugar. Combine everything to a fluffy dough.

Lay the baking sheet on a baking tray (34 x 24 cm) and fill with 2/3 of the brownie dough. Evenly spread the cheese dough over the brownie dough. As a subsequent layer spreach the remaining 1/3 of the brownie dough. Using a wooden stick or a fork merge the upper brownie layer with the cheese, creating a marble-like pattern. Place the baking tray in the oven and bake for 30min. The dough may have a softer consistency in the middle. Let it cool down before serving.
