Another cheese and another recipe. This one a little more fancy, but I think perfect as a starter, or a little snack. Today on the list- Parmesan! I think if I had to choose, I’d say it’s my favourite cheese, along with Grana Padano, also an italian hard cheese. However in comparison to Parmesan, Grana Padano doesn’t take that long to mature, whereas Parmesan can mature up to 7 years. Hence it has a little spicy, mildly nutty taste.
This cheese is on our every pasta dish. But not only. From time to time we make chicken in Parmesan, but I guess this recipe is on every food blog by now. But a pear in parmesan? First I’ve heard of it last year and few weeks ago I’ve seen it in one of the cooking magazines. To be honest the timing was just right, since Mr.P likes to accuse me of buying cook books and magazines and never making anything out of it. Well, I can’t really help it, that I’m drawn to good food, good stories and even better pictures.
But this recipe is also a good start to our new menu plan, which will include far less meat and reduced sugar.
Preparation time: 30min
5 tbsp olive oil
2 tbsp white wine vinegar
1 tbsp honey
30g chopped walnuts
2 big pears
1-2 tbsp lemon juice
ca 80g butter
rucola or a bunch of mixed salads
salt and pepper
Peel the pears and cut them lenght wise in ca 1cm thick slices and remove the core. Grate the cheese, and prepare 3 plates. Sprinkle one with flour, pour a whisked eggs to another, and put the grated Parmesan on another. Sprinkle the pear slices with lemon juice and then coat them on both sides with flour, eggs and the cheese respectively. Heat the butter in a pan and fry the pear slices, few minutes from each side,until the crust will get golden brown.
Wash the salad and arrange it on a plate. In a bowl mix the oil, honey and vinegar to a dressing, and season with salt and pepper. Place the pears on the salad, add the walnuts and sprinkle everything with the dressing.
